Giving Thanks in All CircumstancesGiving thanks when my schedule is overwhelming.

Giving thanks when my schedule is overwhelming could prove difficult. I will never catch up.  It will be Valentine’s Day before I can decorate anything!

! wondered about you. If I know you well or only slightly, I am praying for you and your family, I hold you in my heart. I wonder how your life is going and if, in even the least of ways, my notes have truly offered you help and hope.

Giving thanks even for a few moments can change your day.

It was wet and brutal cold yesterday. Today I woke up to the sun shining through my lacy curtains.  Outside as I was giving thanks to God for His provision, I drank in that cool, clean air, and felt as though I could conquer the world (for a brief moment). I’m thankful for those times. I wish fresh air and sunshine for your busy days.

Later as I rushed through the grocery store, I was greeted with young people wishing me happy holidays and sharing bear hugs . I wish for you hugs from wee ones; they warm our hearts and put life into perspective.

Giving thanks results in sharing with others.

When I do take time to thank God for all He has provided, He nudges me in some way to share with others. It may be simply buying an extra carton of on sale canned goods for the food pantry.

One time, it was to simply get a large cup of flavored coffee to drop off at a shut-ins. The smiles gained when she sipped that brew she could no longer get out to enjoy was priceless! Another time, I paid it forward for an older fella who had stood patiently in the grocery line to pay for his bag of donuts. “God bless you, sir!” His smile told the story; he had been blessed indeed!

Many of you are busier than I, struggling to make it through the day. While I can’t drop in with a treat or hold your hand or hug your neck, perhaps there are a few things I can do for you today.

While giving thanks for you –

1. I can encourage from an understanding heart. I have been there, in the trenches and in the good times. I know firsthand that every caregiver, parent, or child needs hope, love and understanding.

2. I can pray for you. I believe that the love of God knows no boundaries. I believe He cares for us in ways we cannot understand. I believe He wants to comfort you and strengthen you and those you love.

3. I can listen to you. I am a good listener. Sometimes, just talking helps. I want to encourage you, if nothing else, to set aside a few minutes each day to journal your thoughts and your feelings. Be honest with them. And, please let me know when a column meets your need. Let me know how I can be a better encourager for you personally.

Lots of chattering today. Sometimes it’s good to just sit down and talk to an old friend. I really do care about you; I hope you know Jesus cares.

Workers building our new sidewalk had to prepare ahead for a rough journey through mud and mire this week! All the tools had to be in place before wet cement was delivered!

So it is with daily living. Life isn’t just sunshine and roses; it can get brutal without notice! How do we prepare ahead for a rough journey? Click here for Habakkuk’s answer from God..

Last week Cheryl had to leave a conference early. Her husband’s caregiver called: he suffered a stroke and was taken to the hospital. Her plans changed quickly, yet she remained calm.

This week, Sondra played piano for Sunday School and worship and heard her son preach. She then rushed home after services to her ailing husband instead of taking time for her usual lunch outing.

This month a young pastor led worship and encouraged his flock while his wife and her mother were planning his father-in-law’s funeral. Hearts were touched with his powerful message.

A local neighborhood in mourning over a young couples brutal murder, came together to encourage and strengthen the families involved. This tragedy affected us all; yet with God’s help, we strengthen and move forward.

A group of churches stood together this month to sing, pray, and praise God in the midst of challenging times for their association. What was the glue that bonded them through a rough journey?

How do people face these challenges, day after day, year after year? What are the tools they have to prepare ahead for a rough journey?

You will not be surprised the basic tool needed is God’s Word.  Warning: a casual reading now and then will not prepare you adequately. People survive major catastrophes by daily Bible study and time with God. Find time – NO – MAKE time to sit and soak His Word!

One of my favorite verses is “So do not fear, for I am with you; do not be dismayed, for I am your God. I will strengthen you and help you; I will uphold you with my righteous right hand.” Isaiah 41:10 You can always trust God! Always, regardless of circumstances!

#2. Fat Replacer in Recipes.
Instead of replacing butter or oil with applesauce, try pumpkin! Try it in bran muffins, chocolate cake or cornbread; you will be amazed at the flavor!

#3. Versatile kitchen staple.
Add cooked pumpkin to yogurt, oatmeal, pancakes, toast (with drizzle of honey), lentils or legume dishes, sour cream for soups and tacos, soups, chili, stew … and the list goes on! Get creative. Learning to use more pumpkin means getting more nutrition and less fats and sugars into your families’ meals.

#4. Often over-looked snack item.
Don’t toss the seeds! Roasted pumpkin seeds are quite tasty. Remove fleshy parts from seeds you scooped out. Toss in extra virgin olive oil and sea salt. Bake at 300 for 5-10 minutes until golden brown.

Raw pumpkin cubes have a hearty, rich flavor for some; others may find them a bit chewy and difficult to digest. Note: cooking does improve its nutritional quality.

#5. Easy to store
Whether you cook your own pumpkin or buy canned, plan to freeze excess in ice cube trays and save in ziplock bags ready to use all year. When using canned pumpkin, grab plain pumpkin puree, not pumpkin pie mixtures containing spices and sugar.

About those recipe ideas, here are a few teasers

Pumpkin Pasta Sauce: saute’ garlic and onion, add pumpkin puree and herbs such as sage or rosemary; serve over penne pasta.

Pumpkin Cheese Spread: 1/2 cup canned pumpkin, 2 Tbsp. sugar or sugar substitute to taste, 1/2 tsp pumpkin pie spice and 8 ounces of cream cheese. Bring on the crackers!
